Kashiwa Mochi is often made with 100% "Joshinko", a type of fine rice flour which makes the texture firm and not so sticky which differs from Sakura Mochi, but it can be mixed with a small amount of glutinious rice flour to make the dough a bit softer. The most defining feature is the oak leaf wrapped around the outside to symbolize the prosperity of one's descendant. The oak leaf should not be eaten, but it adds a subtle flavour when peeled off before eating the Kashiwa Mochi.
